Step 2: Weigh & Temperature

  • Heat the kettle to the recommended temperature.

If you don't have a temperature-controlled kettle or thermometer, add a little cold water first before pouring over the boiling water. We recommend 10% cold water for 90 degrees and 20% for 80 degrees.

Weigh the appropriate amount of tea and set aside.

Step 3: Heat & Wash

  • Heat all the vessels (Gaiwan and cup) then discard the water.

Add tea leaves to gaiwan, pour over hot water to wash and awaken leaves. Once leaves are covered immediately pour out and discard water.

Note: wash leaves for no longer than 5 secs.
