Behind the New Matcha Launch


Shortly after beginning development on the company’s third matcha latte recipe, Our team connected with a broader network of Japanese suppliers and received an exciting range of new matcha samples. Each powder revealed a different side of flavour, texture, and character—far beyond initial expectations.

A visit to Biofach in Germany earlier this year and meeting supply partners in person brought fresh momentum to the project. What began as a single recipe evolved into a much larger journey, involving flavour refinement, harvest navigation, and the pursuit of something truly special.

Over the past six months, We have developed a new matcha latte recipe and a collection of straight matcha powders that reflect the richness and purity of organic Japanese matcha. Now, with the launch just weeks away, the process offers a moment to reflect on how far the development has come—and the care and collaboration behind every step.

Tasting and Testing

As samples arrived from across Japan, We began a detailed process of tasting and comparison. Each powder was assessed for colour, aroma, mouthfeel, body, and finish. Rather than searching for a single perfect matcha, the focus was on identifying characteristics that could be harmonised into a distinctive blend. After several weeks of testing, a shortlist was created and the first recipe began to take shape. The initial blend for the matcha latte came together more smoothly than expected—at least at first.

A Sudden Shortage

Just as the recipes were being finalised, global demand for matcha surged. Several key powders that had been approved suddenly became unavailable. One particular ingredient—critical for both taste and mouthfeel in the latte—was completely out of stock, with no confirmed timeline for the next harvest.There was nothing to do but start again.

Starting over

With limited options, We returned to the tasting table. Every possible combination from the remaining matcha samples was re-tested, including blends that challenged earlier ideas of balance. Surprisingly, the revised latte recipe turned out even better—more layered, with a softer, lingering finish in milk.

Two new straight matcha powders were also developed, designed for pure preparation without sugar or milk. These blends focused on clarity, umami, and a smooth texture.

But before any progress could be made, another update arrived: stock levels had shifted again, and even the newly revised matcha powders were no longer available. The team had no choice but to wait for the next harvest.

Staying Ready – While Waiting

During the harvest wait, focus shifted to packaging and storytelling. Naming the products required several rounds of discussion. The new latte blend, made primarily from first flush matcha, represented a leap forward in quality and complexity. It was named Super Premium Matcha Latte.

The straight matcha powders were labelled Matcha 02 to 06, following on from the original Matcha 01. These numbers reflect the order of development, not grade or quality.

In parallel, We refined the product blurbs to ensure each label clearly communicated the intention and identity behind the blend. These were then brought to life through thoughtful packaging design.

New Harvest Arrives

When the new harvest samples finally arrived, final blend adjustments were made to match the original recipes. But as with all natural products, no two harvests are exactly alike. Despite using the same cultivars and suppliers, subtle differences between harvests meant each blend required careful recalibration.

To maintain consistency with the original recipes, We worked closely with suppliers to make fine adjustments. It took several rounds of refinement, but the result stayed true to the intended profile.






July 2025
Almost Ready– Preparing for Launch


With recipes confirmed and packaging completed, matcha production in Japan is now underway. Our compliance team has coordinated closely with suppliers to ensure all labelling meets regulatory standards for smooth import into Australia.

To preserve freshness, production and logistics are carefully timed for arrival just before the official launch.

What’s Coming Next


This launch will introduce an upgraded matcha latte and five new straight matcha powders to the range. These include both House Blends and Selected Matcha options.

House Blends are recipes created in-house, combining multiple Japanese matcha powders to deliver a specific flavour and texture tailored to the Australian market. In contrast, Selected Matcha powders are blended by experienced Japanese tea masters and remain untouched. These are expressions of their region, season, and the producer’s philosophy—and are offered exactly as crafted.

With just days to go until release, Our team is excited to finally share the results of months of tasting, testing, and refinement. The green light is near.
