Our Kali Premium Dark Chocolate
The Cocoa and cocoa butter used in Kali Premium Dark chocolate originate from the seeds of the cocoa fruit, which grows on cocoa trees. Cocoa Trees grow in the tropical regions around the Equator, with 70% of the world’s cocoa beans coming from West Africa. It takes a whole year’s crop from one tree to make approximately half a kilogram of cocoa. To prepare cocoa, the ripe cocoa pods are harvested then cut open to remove the cocoa beans. The beans are then fermented, dried, cleaned, and crushed with the shells removed. They are then roasted and finally grounded to produce a cocoa liquor which is conched and refined to manufacture chocolate, or processed further to make cocoa butter and cocoa powder.
