Why does my tea taste burnt / bitter / tannic / astringent?
The most common causes of bitterness in delicate teas like green tea is the water is too hot, there is too much tea and / or the tea is over brewed. Typically bitter tea results when hot water (and steam) is poured directly over the tea from the coffee machine. The best temperature to brew tea is between 80 and 90 degrees, so fill your teapot with hot water first, leave the water to sit for a few seconds then add your tea. Most green and black teas brew in around 3-4 minutes, white teas and tisanes take a little longer. As a rule, use 1 teaspoon of tea is required per standard cup with one teaspoon for the pot.
How should I clean my teapot?
Never use soap or detergents to clean your teapot. Remove tea stains from your teapot by adding a few teaspoons of bicarbonate of soda to boiling water.
